? In addition to tomato and mozzarella... there's more!

If you ask a child what the ingredients of pizza are he will answer... tomato ? and mozzarella !

And do you almost never think about that thing that lies beneath these two delicious ingredients , the dough , the precious "container" that hosts them in such a delicious and irresistible way?

For this reason, in our cooking workshops we teach children that even before them there are  flour and water , two ingredients which, when they come into contact, react to form " gluten " - a complex protein (which can cause harm to some, among other things, think of celiacs) capable of creating within a simple mixture of water and flour but elastic network to the point of being able to retain the gases that develop internally aided by the addition of the "stinky" (as they say them ?) brewer's yeast ...

Is everything else the magic of leavening and cooking in the oven , even the "normal" ones we have in our homes ? that we use at Cucina IN .

 

Here is the recipe for the “Margherita” Pizza that even children make here

INGREDIENTS for 4 PEOPLE

  • Flour 500 g
  • Water approximately 300 g
  • Salt 15 g
  • sugar g 2
  • brewer's yeast 25 g
  • Mozzarella
  • tomato in sauce 

 

Procedure:

  1. Mix the flour with the water, yeast and sugar.
  2. Then add the salt and more water or flour as needed.
  3. Leave to rest in a covered basin until doubled in volume.
  4. Add more flour to make the dough drier, knead a little more and let it rise again .
  5. Knead again, make small balls of 200 g of dough which we will roll out and thin out slightly and place on the trays and leave to rise for another 30 minutes.
  6. Spread a little oiled and salted tomato sauce and bake at 220° in a fan oven.
  7. At the end,  add the cut mozzarella for a quick pass in the oven which will allow it to melt and oil and herbs out of the oven according to taste.

 

VARIANT

With the same dough we can obtain some welcome variations. After the last leavening of the pizza dough, we add a little more flour and knead by hand for a few minutes so as to mix the added flour well and obtain a firm dough. 

Cut a few small "bitefuls" from this dough and roll it out with a rolling pin to obtain a rectangular sheet 1 cm high. In the resulting rectangles we could put some ham, some cheese to melt, a frankfurter, some vegetables... then roll everything up tightly, closing carefully, then cut into slices which we will immediately cook in the oven at 200/220° for about 12 minutes. 

PIZZA (accompanied by an irresistible HOT DOG  ?) is one of the recipes to choose from also for birthday parties with cooking workshops dedicated to children??? which in times of Covid adapt by transforming themselves into tidy snacks with cooking workshops , all strictly distanced in their own workstations !
