1. Creamy soups and soups
Velvety + winter = perfect combination! Winter is exactly the right season to prepare many varieties of tasty cream soups. Our version includes a base of mushrooms and Jerusalem artichokes enriched with walnut oil.
Soups are an excellent alternative to soups, to warm you up; although they are traditional poor dishes, they can be enriched with various ingredients such as, for example, the unmissable Sardinian spiny artichoke soup with broth and lobster meat.
2. Cod
Cod, i.e. white cod preserved in salt, has always been one of the staple foods of Nordic populations, where low temperatures are the rule and not the exception.
An excellent protein source, cod is usually eaten stewed; however its white meat lends itself perfectly to less conventional preparations. We at Cucina In make it in these 3 versions:
- Cod pan cakes creamed with lemon;
- Cod heart meatballs coated in black rice;
- Terrine of cod and poached potatoes with bacon and cabbage.
3. Winter fish
Staying on the topic of fish, in Italy fish is mostly consumed during the summer months; however our seas are rich in winter varieties. Knowing the seasonality of fish allows you to always bring fresh products to your table. Specifically, in winter you can create recipes in which blue fish are the protagonists, namely: anchovies, anchovies, squid, hake, octopus, mackerel, sole and sea bass.
4. Eggplant lasagna with meat
During the winter months, eggplant parmigiana often makes its appearance. An equally succulent variant is the one enriched with minced meat accompanied by tomato sauce.
Compared to the traditional one, the layers, instead of mozzarella, alternate with meat sauce.
5. Traditional dishes
To warm you up from the cold winter, the best ideas come from traditional and regional dishes; both can, in fact, be taken as a starting point for creating new recipes suitable for the cold months.
